Vidchyniaty / zachyniaty is for things on hinges: doors, windows, gates, shutters. Vidchyny vikno, zachyny dveri. The shop sign uses the same verb: vidchyneno, zachyneno.
Vidkryvaty / zakryvaty handles everything else: a book, eyes, a jar, an account, an exhibition, a secret. Vidkryi knyzhku, zakryi ochi, vidkryty rakhunok.
Zamykaty / vidmykaty is lock and key: zamkny dveri, vidimkny mashynu. The same root lives in vmykaty and vymykaty, switching on and off. The test is quick: hinges mean vidchyniaty, a lock means zamykaty, everything else means vidkryvaty.
