  • A Riu Fred, el formatge s'elabora cada matí, de dilluns a dissabte. La matèria primera arriba a les sis: llet de cabra, freda i del dia. Dins de la nau, el mestre afegeix el quall, talla la massa i la posa en motlles. Després, el formatge descansa en una sala freda: l'emmagatzematge dura un mes per als rods petits i tres per als grans. Al final, cada peça surt amb el seu rètol, i el lot sencer s'expedeix als mercats de la costa.
    In Riufred cheese is made every morning, from Monday to Saturday. The raw material arrives at six: goat milk, cold and of today. In the hall the master adds rennet, cuts the mass and lays it into molds. Then the cheese rests in the cold room: storage lasts a month for the small wheels and three for the big ones. In the end each wheel leaves with its own label, and the whole batch is shipped to the markets of the coast.
